Possibly the 2008 summer race at Daytona. That was some great racing. (If only Ragan would've won...stupid gas can) I didn't start watching NASCAR much 'till this year and I love it now.

The 2007 Daytona 500. The photo finish with Harvick and Martin and the crash on the final lap was amazing. Either that or a race Jeff Gordon won, especially his first win in the 1994 Coke 600 (biased lol).
